As the name suggests eggplants start as little purple “eggs” on the vine and mature into beautiful, deep purple eggplants, or aubergine if you’re feeling fancy.

- Store in a cool dry place – think root cellar, around 10-12ºC – or rolled in a dry towel and stored in the warmest part of your fridge.
- For the freezer – cook, blend or slice then freeze for future use. Place in a resealable bag or container once frozen.
- Consume within 2-3 days depending on method.
